For best results ensure that all nuts are the same size (this will ensure even cooking time and prevent undercooking or burning. Evenly distributing the nuts on the conveyor belt will also help ensure that the nuts are roasted evenly.

Note that spritzing the nuts with salt water just before roasting them will give them a light salty taste. Be careful not to add too much salt or it will detract from the natural flavor that is realized during the roasting process. Alternatively, nuts can be rolled in butter or a candied mixture after roasting to add extra flavor.
