Pasteurization is a process which slows down the growth of microbial (microscopic organisms such as bacteria, fungi, archaea and protists) in food. The process was originally developed to prevent alcohol (mainly beer and wine) from souring, however it is now used in many different foods such as milk, custard, cheese, eggs, canned food etc.  The aim of pasteurization is to reduce the number of viable pathogens in a particular substance so that they are unlikely to cause disease.

Some of the diseases pasteurization can prevent include: tuberculosis, diphtheria, salmonellosis, strep throat, scarlet fever, listeriosis, brucellosis and typhoid fever.

For best results ensure that all nuts are the same size (this will ensure even cooking time and prevent undercooking or burning. Evenly distributing the nuts on the conveyor belt will also help ensure that the nuts are roasted evenly.

Note that spritzing the nuts with salt water just before roasting them will give them a light salty taste. Be careful not to add too much salt or it will detract from the natural flavor that is realized during the roasting process. Alternatively, nuts can be rolled in butter or a candied mixture after roasting to add extra flavor.
